Dark Chocolate and Strawberry Cheesecake
If there's one thing I've learnt as a student, it's that comfort food can get you a long way through an exam period. This is mine... rich, chocolaty goodness with sweet strawberries. A perfect pick me up. This is my adaptation of a BBC Good Food recipe, no baking hassle, low cost and simply mouth watering, this has to be one of my favourite desserts.
Ingredients
180g digestive biscuits
75g butter
120g dark chocolate
300g cream cheese
200ml double cream
80g sugar
150g strawberries

30 minutes plus 2/3 hours chilling time £0.55 per serving
Method
1. Melt 75g of butter in a microwavable dish for approximately 10-20 seconds. Meanwhile crumble the digestives until they have a sandy texture. Combine the digestives and melted butter and stir thoroughly before pouring into a 20cm removable base sandwich tin, pressing the base down with the back of a spoon.
2. Melt 100g of chocolate, meanwhile combine the double cream and cream cheese and whip until light and fluffy. Add 80g of sugar and taste, add more sugar to sweeten if necessary.
3. Slice the strawberries in half and stir them into the mixture, also pour in the melted chocolate and swirl through.
4. Pour the entire mixture into the tin and smooth over with a palette knife.
5. Place in the fridge and allow it to set, this should take 2-3 hours.
