Speedy Stir-Fry!

Zesty Orange and Dill Fish Stir-Fry 

Stir-fries are quick, easy and involve minimal cleaning up afterwards! The sweet tasting haddock has a soft and tender texture which is complimented perfectly by the citric taste of the orange, creating a meal bursting with flavour. This recipe is also perfect for using left over vegetables, substitute any of your favourite vegetables into this recipe to make a tasty and filling meal.
 
Ingredients
Small fresh smoked haddock fillet
1/2 cup of rice
1 cup of water
1/4 red onion
3 mushrooms  
1/2 orange pepper
100g of Schwartz Forfish Orange & Dill Sauce
Tsp. soy sauce

Method
 
1. Begin by boiling the water in a pan and pouring in the rice, allow the rice to absorb the water, this should take around 10 minutes.
 
2. Meanwhile prepare the vegetables by dicing the onion, pepper and mushrooms and fry them in a wok for around 5 minutes.
 
3. Slice the haddock fillet, and add this to the wok, cooking for a further 5 minutes.

4. Add the rice and sauce, stirring through, cooking for a final 5 minutes. Then serve immediately.

Apples, Pears and Everything Sweet....

 Apple, Pear and Cinnamon Pie

 
Pie is the ultimate comfort food and this pie is certainly no exception. With the sweetness of the cooked apples and pears combined with the warmth of the cinnamon, this pie is perfect for a cold winters day. Why not make a pie and freeze down the rest to save for another day? Substitute in seasonal fruits or any of your favourite fruits to create your perfect pie.
 
 
Ingredients

Ready to bake!
 4 cooking apples
1kg pear slices
320g Jus-Rol puff pastry sheets
1 tbsp. brown sugar
1/2 teaspoon cinnamon
 
8" pie tin
 
 


Serves                                         Prep time                                      Approximate cost

Method

1.  Preheat the oven to 220C or 200C for a fan assisted oven.

2. Cook the apples with a with a 1/4 of a teaspoon of cinnamon for 10 minutes until soft.

3. Meanwhile, roll out the puff pastry and line a greased baking tin with a layer of the pastry.

4.  Add the fruit to the baking tin and dust with the remaining cinnamon.

5. Place the remaining pastry over the fruit and using a fork press down the edges of the pie combining it with the lower layer of pastry.

6. Glaze the pie with a small amount of milk, to create the perfect golden pie crust.

7. Place the pie in the oven and bake for around 45 minutes.

The Perfect Pizza!

Pepperoni Pizza

 
This recipe is super quick, by using a pizza base mix and pizza topping, preparation time is halved but it still tastes amazing. Add any combination of toppings and create your perfect pizza. This recipe makes a 12" pizza, which is perfect for a group of friends or leaving left overs for the day after (my personal favourite!)
 
Ready for the oven
Ingredients 
2 packets of 145g pizza base mix
150g pizza topping
125g mozzarella sliced
1/2 red pepper
3 mushrooms
8 pepperoni slices
10 olives
 
 12" Pizza tray

Method
 
1.  Preheat the oven to 220 C.
 
2. In a large bowl mix the pizza base with 8 fl oz of water and using a rolling pin, roll out the mix ready for the tray.
 
3. Place the rolled mix directly onto a greased pizza tray and sprinkle a little flour to prevent the mix from sticking.
 
4. Once the base is ready, spread the pizza topping evenly over the top.
 
5. Now slice the mushrooms and pepper and add to the pizza along with the mozzarella, olives and pepperoni.
 
6. Place in the preheated oven and allow it to cook for 15-20 minutes until the cheese has melted and the base is firm.

The Veggie Option!

Quorn Cottage Pie Jacket Potato
 
Why Quorn? Whether you are a vegetarian or not Quorn is a great substitute for mince, it's low in fat, high in protein and best of all it's cheaper than mince! Substitute any of your favourite vegetables into this recipe to create a warming and filling meal.
 
 
Ingredients
Large jacket potato
100g Quorn mince
1 tbsp. Ketchup
1 tbsp. tomato puree
250 ml vegetable stock
1/2 carrot chopped
1/2 onion chopped
1 tbsp. wholegrain mustard
2 tbsp. butter
1 tbsp. Worcestershire sauce
50g grated cheddar

 Method
 
 1. Heat the oven to 200 C or 180 C with a fan assisted oven. Begin by microwaving the jacket potato for 15 minutes until it has softened. 
 
2. Whilst the potatoes are in the microwave, begin to prepare the sauce by  frying the onions in a pan until they begin to brown and adding the carrots. Then place the Quorn in the pan and simmer for a further 12 minutes.
 
3. Then add the Ketchup, tomato puree, Worcestershire sauce and vegetable stock, stirring the sauce thoroughly. Lower the heat and allow this to bubble for 15 minutes.
 
4. Whilst the sauce is bubbling remove the potato from the microwave and cut it in half, using a spoon scrape out the potato and place in a bowl, leaving the potato skin intact.
 
5. Add a the mustard and butter to the potato and mash until light and fluffy.
 
6. Now spoon the sauce into the jacket potato and spoon a layer of mash over the top. Covering with the grated cheese.
 
7. Place the jacket potato on a baking tray and bake in the oven for 15 minutes, until the cheese has melted and the skin is crisp.

A Simple Supper...


Salmon with Pesto and Pecorino Cheese
 
 A simplilfied version of a Delia Smith recipe, yet equally as tasty, this recipe can be adapted to any individual. Love cheese? Add more! Pecorino cheese is an Italian cheese made from ewe's milk and has a sharp and salty texture, a perfect compliment to the salmon and pesto. This is a super quick and easy recipe that can be used as part of a tasty main meal.

 




Ingredients
 
Salmon fillet skinned
3 tbsp green pesto sauce
2 tbsp grated pecorino cheese
salt and pepper to season

Method
 
1. Pre-heat the oven according to the cooking instructions on the salmon packaging. 
 
2. Cover a baking tray in foil and grease with a teaspoon of oil. Then place the salmon fillet on the baking tray and season with salt and pepper.
 
3. Spoon all of the pesto onto the salmon fillet and top with the grated cheese.
 
4. Place the baking tray in the centre of a pre-heated oven and cook for approximately 10 minutes, until the salmon is cooked and the pecorino has created a golden, crisp coating.
 
 
 
 
Why not serve as a main meal with new potatoes and carrots?

Wok This Way...

Sweet Chilli Chicken Noodles
 
There is no doubt about it, noodles are and always will be my favourite food.  After a day of revision there is nothing I want more than to have a warm bowl of these delicious sweet chilli chicken noodles. The best part is they are quick and easy to make, throw it all in the wok and you have a filling and tasty meal in no time!

Ingredients
 
150g Amoy straight to wok noodles
4 tbsp sweet chilli sauce
2 tbsp soy sauce
1 tbsp vegetable oil
150g diced chicken
100g sliced mushrooms
1/2 red pepper chopped
1/2 clove garlic finely chopped
small bunch of spring onion
pinch dried chilli flakes

                                                     15/20 minutes cooking
 
 
 Method
 
1. Heat the vegetable oil in a wok and add the chicken, cooking for approximately 10 minutes or until the chicken is golden brown and completely cooked.
 
2. Add the garlic, pepper and mushrooms to the chicken and cook for 2 minutes.
 
3. Next add the spring onion, chilli flakes, the sweet chilli sauce and soy sauce stirring through.
 
4. Now add the noodles along with 30ml of water and cook for a further 2 minutes, stirring everything together. Serve immediately.
